Chicken Enchiladas with Salsa and White Cream Sauce



Yum!  I have never had enchiladas before.  If my mother could see me now!  =)  I read the recipe and all the ingredients sounds good so I decided to give it a whirl...

 Ingredients
10 small flour tortillas
2 cups shredded chicken, see Super Easy Shredded Chicken
3 cups shredded cheese, I used a mexican blend
2 T butter
3 T flour
2 cups chicken broth
1 cup sour cream
1 cup salsa

To Prepare
1.  Melt butter in a sauce pan.

2.  Temporarily remove from heat to stir in flour.


3.  Add chicken broth and return to medium heat, stir frequently until sauce is thick and bubbly.


4.  Remove from heat and let sauce rest.


5.  Mix chicken and 2 cups of cheese in a mixing bowl.


6.  Fill tortillas with chicken and cheese mixture, wrap closed and place in a baking pan with flap side down.


7.  Pour salsa over tortillas.


8.  Stir in sour cream to sauce.


9.  Pour sauce over tortillas.


10.  Cover with remaining cheese.


11.  Bake at 350°F for 22 minutes.

12.  Broil for 3 minutes to brown the cheese.
