Buffalo Chicken Meatballs


Yum!  Tried this new recipe that I adapted from hungryharps.com.  

Ingredients
4 chicken breasts, cooked and shredded, see Super Easy Shredded Chicken
1 cup of chopped onion
5 T minced garlic
1 tsp black pepper
1 T cajun seasoning
6 T margarine
1 cup cayenne pepper sauce, my fav is Trappey's Red Devil Cayenne Pepper 
1 T cajun seasoning


To Prepare
1.  Add shredded chicken to a mixing bowl.  Make sure that most of water/broth is squeezed out of shredded chicken, if you use my Super Easy Shredded Chicken recipe.  


2.  Add onion and garlic to blender.  (I used my magic bullet.)  Add small amount of water and mix to make a puree.  It is better to add too little and have to add more water later.  Once pureed, add to the mixing bowl.




3.  Add pepper and cajun seasoning.


4.  Mix thoroughly with hands, form little meatballs and place in a baking dish.


5.  Bake in oven for 30 minutes at 375°F.


6.  While chicken meatballs are baking, prepare the buffalo sauce.  Put margarine and pepper sauce in a bowl and microwave for approximately 2 minutes.

7.  Once meatballs are finished baking, coat each chicken meatball generously with buffalo sauce.
