Stuffed Shells - Cheese Filling

I love these.  I'm not too sure why I have never made them before until now.  They are so easy.  The prep is really quite quick and the pay off is fabulous!!

    1 - 32 oz container of ricotta cheese
    1 pound shredded mozzarella cheese
    8 oz grated Parmesan cheese
    2 large eggs, beaten
    1 tsp black pepper

1 - 12 oz box of jumbo shells
2 cups of your fav spaghetti sauce

To Prepare
1.  Cook jumbo shells according to box directions, be careful not to overcook!  

2.  Combine all other ingredients in a large mixing bowl and mix.

3.  Cover the bottom of a baking dish with sauce.

4.  Using a tablespoon, scoop the cheese mixture and fill shells.  Place stuffed shells in baking pan.

5.  Pour remaining sauce over the shells.

6.  Bake at 375°F for approximately 45 minutes.
